Aloo Muter Aor Hing Ka Samosa

Ingredients (recipe for 16 portions)

  • 400g Maida fine flour
  • 5g salt
  • 10g ajwain
  • 1g bicarbonate soda (for the stuffing)
  • 600g potatoes, boiled, peeled and diced
  • 200g green peas
  • 50g ginger
  • 20g garlic
  • 100g fresh coriander
  • 100g fresh mint
  • 10g crushed cumin seed
  • 10g crushed coriander seed
  • 10g cumin powder
  • 10g coriander powder
  • 10g turmeric powder
  • 10g black salt
  • 5g chaat masala
  • 400g cooking oil
  • 100g cashew nuts, fried with cumin and coriander powder

Method

  1. Mix flour with ajwain and salt into a dough. Divide into 16 parts.
  2. For the filling, cook green peas with the potato and combine the rest of the ingredients.
  3. Flatten the dough, add the filling and wrap into a triangular shape.
  4. Deep-fry the samosas until golden brown.
  5. Serve with mint yoghurt or your choice of spicy condiments. Best eaten hot.
