Yannick Oppermann recently joined Pudong Shangri-La, East Shanghai as executive pastry chef. In this role, Chef Yannick leads the daily operation and strategy of the pastry and bakery team.
Prior to his appointment at Pudong Shangri-La, East Shanghai, he held the same position at The Peninsula Beijing hotel and SPOON by Alain Ducasse at InterContinental Hong Kong. Chef Yannick’s 14 years of experience within culinary industry has seen him work at multiple Michelin-star restaurants led by legendary chef Alain Ducasse, including Ducasse’s iconic “Le Jules Verne” restaurant atop the Eiffel Tower.
Chef Yannick’s experience also includes several years at the Michelin threestar Hôtel-Restaurant Re’Serstuff à Roeser in Luxembourg and Kuntzman, Moulins Les Metz in France. Early in his career, he also gained exposure in the pastry kitchen of Sharm El Sheikh Naama Bay in Egypt.
Chef Yannick received his formal culinary and pastry training throughout France. While knowledgeable about all forms of pastry and chocolate making, in particular, he enjoys working with pulled and blown sugar.
