The Heerde, Netherlands-born chef was inspired by his father’s profession and decided to be a chef during his teen years. His career started in Holland in 1995. Since then, it has taken him to many exciting places around the world, including the Arctic.
The Dutch chef has a broad spectrum of knowledge and always tries to learn as much about everything as possible. His travels and the products he sees in the markets are what usually inspire him to create his dishes. This is why his cooking style is not limited to any cuisine and instead emphasises the use of pure and fresh ingredients. Always mindful of combining too many components, he strives to bring out the flavours of his carefully selected ingredients, delivering the best product and keeping guests satisfied and happy.
Bringing global influences from his previous experiences, Chef Mark now leads the team of versatile chefs at Shangri-La Hotel, Jakarta, with his passion, drive for perfection and “never give up” attitude.
