Head Chef Sunny Tse
Prior to joining Traders Hotel, Hong Kong, Head Chef Sunny Tse was previously at Island Shangri-La, Hong Kong, for over 20 years. In preparation for his new appointment at Café Malacca, Chef Tse travelled to Malaysia and Singapore - extensively studying the local methods of preparation to deliver authentic dishes true to the region's culture.
