Lobster Tartare on Cucumber with Lemon Yoghurt Dressing

Ingredients (one serving)

  • 80g Boston lobster meat, cooked and diced
  • 20ml mayonnaise
  • 3g red bell peppers, diced
  • 3g yellow bell peppers, diced
  • 1g Chinese parsley, chopped
  • 4ml vodka
  • 15g hot-house cucumber
  • 2g mixed cress salad
  • 3g salmon roe
  • A little fresh dill
  • 0.5ml lime olive oil dressing
  • 2 tbsp plain yoghurt
  • Juice of 1/3 of a lemon
  • Tabasco sauce to taste
  • Salt and pepper to taste

Method

  1. Mix the lobster meat, bell peppers, parsley and vodka.
  2. Season with Tabasco, salt and pepper.
  3. Dress the cress salad with the lime olive oil and arrange over the lobster tartare.
  4. Mix the plain yoghurt with the lemon juice.
  5. Drizzle the yoghurt over the serving and garnish with salmon roe, fresh dill and cucumber.
