Lobster Bisque

Ingredients (recipe for 5 litres)

  • 6 pcs Boston lobster head (1.5kg)
  • 600g fresh crab meat
  • 100g onions
  • 200g leeks
  • 250g carrots
  • 80g celery
  • 1/2 bud tarragon
  • 500g fresh tomatoes
  • 150g tomato paste
  • 40g peeled garlic
  • 200ml vegetable oil
  • 100ml V.S.O.P. (brandy)
  • 300ml white wine
  • 3 ltr chicken stock
  • 3 ltr water
  • 500ml whipping cream
  • Seasoning

Method

  1. Heat the oil in a large pan, fry the lobster head and crab meat until dry.
  2. Add the vegetables, tarragon and tomato paste, fry gently until soft.
  3. Add the VSOP and white wine. Whisk the chicken stock and water into the mixture slowly. Simmer for about 1.5 hours.
  4. Add the cream and simmer for 20 minutes. Strain.
  5. Garnish with garlic croutons.
