Poached Lobster in Miso Soup

Ingredients

  • 1pc Live lobster
  • 10g Kunbu
  • 50g Miso
  • 20g Sugar
  • 50ml Sake
  • 20ml Soy sauce

Method

  1. Cut the lobster in half, then divide it into 4 -5 pieces.
  2. Put the lobster into a pot; heat with bonito stock, sake and kunbu.
  3. Add the other ingredients into the pot. Add in the egg yolk when the lobster is medium-well. Remove the pot from heat when the egg yolk is half-done. Serve immediately.
