Veal Fillet with Pecorino Cheese Crust, Pistachio, Chocolate Sauce and Orange-enhanced Mashed Tomato

Well-portioned veal lightly seared to bring out the juices, then baked to tenderness with pecorino cheese. Perfectly accompanied by the creamy orange-enhanced mashed tomato.

Pan-seared Tuna Fillet in Nut Crust with Bell Pepper Ice-cream and Parsnip Sauce

Cubes of fresh tuna playfully rolled in a mixture of nuts. Creamy parsnip complements the aromatic combination, while the sweet bell pepper ice-cream offers a delicate injection of spiciness without the heat.

Thinly sliced marinated veal tenderloin is presented under a blanket of tangy and rich mayonnaise, tuna and caper sauce.
