Executive Chinese Chef Kam Kwan
Chef Kwan’s love of cooking came at a young age as his father was a chef and he learnt a lot by observing him. After graduating, Kwan moved to Taiwan for a year and then moved to Dubai as Sous Chef for a hotel. Kwan worked his way through the rankings to become Executive Chinese Chef in 2002. Now a seasoned chef, he brings a wealth of experience and knowledge to Shangri-La Hotel, Dubai, where he is heading up the team at Shang Palace. His specialities are Cantonese, Szechwan and Peking dishes.
