Braised Beef Tendon with Black Bamboo Shoot & Garlic in Spicy Oil

Ingredients

  • 600g beef tendon
  • 100g garlic
  • 150g smoked black bamboo shoot

Dressing

  • 20g chilli bean paste 
  • 5g sugar
  • 10g chicken powder
  • 50g "Bird's Eye" chilli peppers
  • 10g chilli oil

Method               

  1. Wash the black bamboo shoot and soak in water for 12 hours.
  2. Wash beef tendon and cook it in the boiled water for half an hour.
  3. Put black bamboo shoot and beef tendon in the prepared chicken soup and stew them for 5 minutes.
  4. Put some dressings such as chilli bean paste, sugar, chicken powder, garlic and bird chilli.
  5. Lastly, add chilli oil and display in a terrine.
