Executive Chef Tang is a master of Cantonese, Sichuan, Hunan, Huai Yang and Dongbei
cuisines. He also constantly integrates his unique views to these cuisines and
creates innovative dishes with local features.
According to the
requirement of modern dining culture, the dishes should be healthy and
nutritious with the original flavour retained. Shang Palace offers, among other
dishes, homemade tofu dishes, whole wheaten food and homemade dishes which are
cooked with caltrop starch.
