Risotto con gamberi profumato allo zafferano


  • Onions
  • Garlic
  • Risotto Rice
  • White Wine
  • Saffron Stock
  • Shrimp
  • Parmesan Cheese
  • Butter or Olive Oil
  • Fresh Herbs
  • Salt and Pepper to Taste


  1. Sauté the onions, garlic and other vegetables with a little oil or butter.
  2. Add in the risotto rice (i.e. Arborio, carnaroli) and cook until translucent.
  3. Add in the white wine and stir continuously until it is absorbed.
  4. Add a ladleful of hot saffron stock and cook over medium heat.
  5. Stir continuously until all the stock is absorbed and the risotto is thick and glossy.
  6. Add in the final ingredients, including butter, parmesan cheese and shrimp. Leave the risotto to sit for a few minutes to let all the flavours settle. 
  7. Stir in some fresh herbs before serving.
