Spit-roasted lamb couscous, oriental style spiced vegetables and chili sauce

Ingredients: 

Lamb

Chili sauce:
Lamb jus 300ml
Harisa chili sauce 20g

Couscous

Spiced vegetables:
Carrot 50g
Fennel 50g
Onion 50g
Pumpkin 50g
Green zucchini 25g
Yellow zucchini 25g
Bell pepper 50g
Tomato paste 5g
Tomato 50g
Coriander seed 5g
Ras el hanout
Salt, pepper, sugar
Chicken stock 300ml
Lamb jus 100ml

Method: 

  1. Cut all the vegetables into cubes and remove the skin of the bell pepper, and the pulp and skin of the tomatoes. Heat the olive oil in a big pan. Add the carrot, fennel, onion, pumpkin, zucchini and bell pepper, making sure they are all cooked at the same time. Then add the tomato paste and the tomato. Cover the surface with the chicken stock. Add the ras el hanout. Cook for a while. Then, add the lamb jus and season it.
  2. Make a roll from the lamb shoulder, with the nerves and the fat already removed. Put the meat on the grill, cook in the steam oven and then, cool down.
  3. Spit-roast the lamb. Put the couscous in a circle around the vegetables in a bowl. Put the lamb on top. Decorate with the herbs. Serve the chili sauce in a sauce bowl.
