Chef Yuan's signature Jingyayuan Peking Roast Duck has earned acclaim from guests around the world. He has travelled extensively across Japan, Germany, the Philippines, and France to share his culinary expertise, introducing authentic Peking duck to diners worldwide.
Recognized as an Intangible Cultural Heritage, Peking Roast Duck is prepared by Chef Yuan using a time-honoured hanging-oven roasting technique that has been passed down for more than 160 years. Fragrant jujube wood is used for roasting, preserving a traditional method that has endured for over a century.
Each duck undergoes an intricate pre-roasting process, including air injection to gently separate the skin from the meat, thorough cleaning, blanching, glazing, air-drying, and cavity filling. Every step is carried out with rigorous precision and meticulous care, ensuring that each freshly roasted duck consistently delivers outstanding quality.
