Junior Ballroom on 28 March 2014. Mr.
Gautier Bonis – Brand Ambassador of DBR (Lafite) shares the legend of DBR
(Lafite) with guests. The wine dinner is a chance for guests to explore wine
culture and Shangri-La hospitality.

wine is Château Paradis Casseuil. It is from 53 hectares Bordeaux estate. BDR
(Lafite)’s Bordeaux estates technical team supervise the vineyard, using the
traditional methods of Bordeaux. The wines of Paradis Casseuil show freshness,
deep fruity characteristics and light oaky flavors. They can be enjoyed within
2 to 3 years after harvest. The yield production is voluntarily limited to
ensure high quality wines, respecting the style that characterizes DBR

red wine is paired with a six-course dinner prepared by Executive Chef,
Francesco Rizzo. The dishes are Alaskan crab meat salad served with avocado
salsa, lobster bisque served with cognac and saffron rouille, teriyaki cod fish
served with stuffed tomato with egg white, lemon Sorbet served with fruit
compotes, char grilled fillet of grain fed beef, goose liver pitherver sautéed asparagus,
potato gratin, shiraz cepe jus and Caribbean white and dark chocolate mousse
with caramelized nuts, and strawberry salad.
