Chicken Marinated in Hua Diao Rice Wine

Ingredients

  • 1 chicken
  • 500g rice wine
  • 1ltr chicken broth
  • 10g salt
  • 20g chicken bouillon
  • 10g medlar
  • 20g chicken powder

Method               

  1. Poach the whole chicken in boiling water for 2 minutes. Remove and soak in an ice bath for another 2 minutes.
  2. Place the chicken in boiling water for 15 minutes. Remove and soak in an ice bath till the chicken is completely cooled.
  3. Add Chinese rice wine, salt, medlar, chicken bouillon and chicken powder to the chicken broth and chill.
  4. De-bone the chicken and soak in the mixture. Marinate for 10 hours.
  5. Cut the chicken into pieces and place on a flat plate, ready to serve.
