Fried Sea Bass with Apple Lemon Sauce


  • 1 pc green apple, shredded
  • 2g calamansi, juiced
  • 2g garlic, peeled and chopped
  • 3g wansoy coriander, chopped
  • 50g soya oil
  • 5g flour
  • 2g sugar, refined
  • 20g red pepper, diced
  • 300g sea bass
  • 3g fish sauce
  • 14g water


  1. Coat the sea bass with flour. Deep fry until golden brown. Set aside.
  2. Mix the fresh calamansi juice, water, sugar and fish sauce.
  3. Add chopped coriander, chopped garlic and diced red pepper.
  4. Pour the calamansi mixture on a plate. Place the deep-fried sea bass on top of the mixture. Garnish with shredded green apple.
