Executive Sous Chef Thenesh Marugaya

His cooking is inspired by his childhood days, when he would assist his mother with shopping at the night market. With over 16 years of experience beginning from his roots in Malaysia, touring Singapore and Kuala Lumpur, then moving to the coastal city of Hong Kong, before finally arriving in Makati Shangri-La, Manila.


Executive Chinese Chef Ben Ling Kui Lam

Chef Ben, as he is fondly called, has mastered the art and science of cooking, with over 20 years of experience. His knowledge on and passion for classic Chinese cuisine is reflected on every dish that he creates for Shang Palace.

Whether ala carte or banquet-style, Chef Ben and his talented culinary team always deliver sumptuously authentic Chinese dishes that easily become favourites among Shang Palace’s patrons.

One of his many specialties is the lauriat, an extensive feast with 8 to 10 courses that altogether make for a luxurious dining experience in celebrations and special occasions.


Chef de Cuisine Sebastian Barcudes

For over 17 years, Chef de Cuisine Sebastian Barcudes has been cooking in different kitchens around the world. His experience includes working at the 7-star Burj al Arab hotel, where he honed his skills learning from and with fellow chefs.

The controlled chaos, adrenaline, applied Science, and bond between his team made him the respected Chef that he is today, while he takes his interactions outside the kitchen as constant inspirations that make him even more passionate about bringing the best dishes to the table.

An Argentinian through and through, Chef Sebastian is always ecstatic to fire up the Josper grill for luscious, tender meats that keep guests coming back to Sage Bespoke Grill.


Executive Pastry Chef David Inglada Burgos

It takes time, skill, and art to create something extraordinary of simple ingredients. With this in principle, Executive Pastry Chef David Inglada Burgos creatively applies his mastery in all the pastries, breads, and chocolates that come out of his kitchen.

Having experienced working in different restaurants around the world, Chef David dedicated his time and focus on making pastries that would eventually earn him and his works recognition. This includes being named as the Best Pastry Chef in Catalonia with mention to the Best Dessert and Chocolate Work in 2000.

Chef Davjid continuously masters the process of producing subtle yet surprising flavors in his sweet and savory creations. He bravely applies creative innovations to make everything his own, focusing on flavours and textures that complete the experience.
