Traders Hotel, Hong Kong Launches Cafe Malacca

Traders Hotel, Hong Kong, has launched Café Malacca, a restaurant featuring authentic Malaysian and Singaporean hawker fare.  Diners at Café Malacca will be transported to the hawkers of Malaysia and Singapore for street-style food, all freshly prepared with aromatic spices, herbs and ingredients.

House specialties like Hainanese Chicken Rice;Penang Char Koay Teow, stir-fried flat rice noodles with prawns, Chinese sausage, chives and bean sprouts; Satay, grilled chicken or beef skewers in traditional Malay marinade served with aromatic peanut sauce and ketupat; Singapore Laksa, coconut based spicy soup noodles, served with bean curd puffs, fish cakes, prawns and half a boiled egg;  and Penang Assam Laksa, thick rice vermicelli in a tangy and spicy fish-based soup, all freshly prepared by our Head Chef Sunny Tse and his team.

Other favourites such as Nasi Lemak, a fragrant coconut rice served with fried chicken, peanuts, fried anchovies and accompanied with sambal sauce; Rojak, a vegetable and fruit salad in special Penang prawn paste sauce; Fried Carrot Cake, turnip cake cubes fried with bean sprouts, prawns and preserved turnips; and Singapore Otak-Otak, Peranakan spicy fish paste wrapped and grilled in banana leaf.

Authentic Malaysian and Singapore beverages for exampleKopi-O, freshly brewed coffee from Malaysian coffee beans; Calamansi Drink; fresh Barley Water; Lemongrass Drink, lemongrass juice with pandan-flavoured jelly; and Teh Halia, ginger-flavoured milk tea are also amongst the Malaysian and Singapore favourites served here.

Desserts to entice you are for example Burbur Pulut Hitam, black glutinous rice pudding served with coconut cream; Kuih Dadar, pandan-flavoured crepe filled with grated coconut in palm sugar; and Kaya Toast, pandan-flavoured coconut jam served on fleshly toasted buttered bread.

Our head Chef Sunny Tse travelled with our consultant to Malaysia and Singapore, tasting and studying the local flavours there and observed their methods of preparation to bring back these authentic dishes true to their culture there.
