USA Baby Back Pork Ribs, Carolina Style

For approximately 8 kg of baby back pork ribs

For the Rub 

  • Cajun mix 15 g
  • Chili powder 15 g
  • Cumin powder 10 g
  • Garlic powder 15 g
  • Freshly ground black pepper 10 g
  • Cinnamon powder 5 g
  • Freshly grated nutmeg 1 piece
  • Salt 50 g
  • Brown sugar 200 g

    Mix all of the above ingredients together

For approximately 1.5 L of BBQ sauce  

  • Pomace olive oil 140 g 
  • Ketchup 560 g
  • Sweet chili sauce 560 g
  • Honey 245 g
  • Brown sugar 140 g
  • Soy sauce 60 g
  • Worcestershire sauce 60 g
  • Garlic powder 60 g
  • Onion powder 150 g
  • Apple vinegar 100 g
  • Freshly ground black pepper 10 g
  • Salt 15 g

    Mix all of the above ingredients together and set for 12 hours before use
  • All-natural baby back pork ribs from the USA 8 kg
  • Apple juice 1.8 L
  • Honey 250 g

Preparation 

  1. Cover the meaty side of the pork ribs with 75% of the rub mixture
  2. Use the remaining 25% of the rub mixture to cover the bony side of the ribs
  3. Let rest for 12 hours in the refrigerator, well covered

For the cooking process 

  1. In a BBQ pit prepare a base of charcoal and wood chips
  2. Heat up the grill to 150°C
  3. Place the bony side of the ribs on the pit without making contact with the fire for around 45 min
  4. Open the pit and flip the ribs onto the meaty side. Close again and let cook for about 45 min
  5. Take the ribs out of the pit and wrap them one by one with a double layer of aluminum foil. Before closing the aluminum foil add 120 ml of apple juice and 1 tablespoon of honey to the meaty side of each slab. Close the foil tight. Do not break the foil
  6. Place the ribs back on the pit and cook for another 30 min
  7. Remove the ribs from the pit and let them cool down
  8. Place each slab in a vacuum bag with 100 ml of apple juice. Seal the bags and let them sit for 12 hours

For the serving process 

  1. Submerge the vacuum bags with the ribs in a pot of boiling water
  2. Allow the ribs to slow boil for 10 min
  3. Open the bags and place the ribs on a flat tray. Cover the ribs with the BBQ sauce made previously. Make sure every part of the ribs is well coated with it
  4. Bake the ribs for 8 min at 180°C
  5. Serve the ribs with your favorite garnish, salad, grilled vegetables or baked potatoes. It is really a matter of preference
  6. Enjoy these very tasty ribs
