For the salad 

  • 80g shredded green papaya
  • 20g shredded carrot
  • 3g garlic
  • 3g small red chilies
  • 20g string beans
  • 20g roasted peanuts
  • 10g dried shrimp
  • 25g cherry tomatoes
  • 28g fish sauce
  • 28g palm sugar
  • 24g lime juice
  • Tamarind juice
  • 25g cashew nuts

For the pork 

  • 120g pork shoulder
  • 10g soy sauce
  • 15g seasoning sauce
  • 5g garlic
  • 2 pcs coriander root
  • 8g white sugar
  • 5g pepper powder


For the salad 

  1. In a mortar, pound the chilies, garlic, roasted peanuts, string beans, tomatoes and dried shrimp.
  2. Season with fish sauce, palm sugar, lime juice and tamarind juice to taste.
  3. Mix well with the shredded green papaya and carrot.

For the pork 

  1. Marinate the pork shoulder with all ingredients and it leave in the refrigerator at 5°C for at least 30 minutes.
  2. Grill the marinated pork above 78°C until well done.
  3. Serve with the salad and fresh vegetables.
