Braised Live Abalone with Oyster Sauce


  • 6 pieces (450gm) fresh whole abalone
  • Light soy sauce
  • Oyster sauce
  • Sugar
  • Salt to taste


  1. Clean the shell of the abalone with a brush, remove the abalone from its shell and discard any unwanted parts
  2. Use salt and ginger to clean the abalone.
  3. Cut the surface of the abalone diagonally to create a diamond shaped pattern.
  4. Steam until thoroughly cooked.
  5. Perfectly shape the abalone and add all ingredients to create a sauce.
  6. Add sauce to abalone and stew for an hour. 
  7. Remove the abalone, plate and serve.
