Chilled Sago Cream with Fresh Mango Juice & Pomelo

Ingredients(Serves 4) 

  • 400g mango, peeled and seeded
  • 90ml coconut milk
  • 150ml milk
  • 40g sago, cooked
  • 100g rock sugar
  • 100ml water
  • 120g pomelo segments, membranes removed

Method

  1. Puree the mango in a food processor.
  2. Boil the water with rock sugar to make a syrup.
  3. Tear the pomelo segments into small pieces.
  4. Mix all the ingredients together and chill in the refrigerator.
  5. Serve cold, in a bowl.
