Teppanyaki Salmon Kozan

Ingredients (serves 5 persons)

  • 60g per serving fresh salmon
  • 10ml cooking oil
  • Salt and pepper

For the sauce 

  • 1500ml water
  • 250g carrots, grated
  • 250g celery, grated
  • 175g garlic, grated
  • 150g young ginger, grated
  • 500g white onion, grated
  • 100g sugar
  • 500ml cooking sake
  • 2000ml mirin hon
  • 800ml Yamasa Shoyu soy sauce


  1. Ensure the teppan is hot. Drizzle with oil.
  2. Grill salmon on both sides until golden brown, sprinkle a little bit of salt and pepper.
  3. Plate the salmon.
  4. For the sauce, combine all ingredients in a pot and simmer until thick.
