Green Papaya Salad

Ingredients

  • 400g prawns, peeled and poached
  • 800g green papaya, julienned
  • 120g large cucumbers, julienned
  • 120g large carrots, julienned
  • 60g onions, sliced
  • 60g sweet basil, chopped
  • 20g coriander leaves, chopped
  • 80ml white vinegar
  • 100ml fish sauce
  • 10g bird-eye chilli, chopped
  • 30g garlic, chopped
  • 100g white sugar
  • 30g peanuts, roasted and crushed

Method

  1. To make the dressing, mix fish sauce, vinegar and sugar in a large bowl. Stir well. Add garlic and chilli.
  2. Mix the green papaya, carrot, cucumber, onion and coriander in a bowl. Add the dressing and mix again. Let sit for 10 minutes.
  3. In a separate bowl, mix the poached prawns with salad dressing and let sit for 10 minutes.
  4. To serve, add the crushed peanuts to the papaya salad and mix. Arrange the prawns on top.
