Shangri-La Hotel, Singapore Hosts Hawaiian Festival at The Waterfall

The Waterfall at Shangri-La Hotel, Singapore will showcase the three-day “Aloha Hawaii” from 27 to 29 September 2013.  Featuring a spread of Polynesian flavours in food and live entertainment, the festival brings the Aloha spirit into the heart of Singapore.  Guests will be charmed by music and dance performances by Grammy-nominated Hawaiian musician, Jeff Peterson, and Hawaii’s respected guitarist, Nathan Aweau.  They will be joined by native hula dancers, Capella Williams and Pomaikai Klein.

Nestled amidst 15 acres of lush, tropical greenery, The Waterfall is known for its healthy, yet creative dishes with a trove of fresh, seasonal produce and gourmet merchandise sourced from sustainable origins.  Executive Chef Nicola Coccia will use the same culinary philosophy to craft a Hawaiian-inspired menu of wholesome, flavourful creations for the festival.

Guests can savour an exciting four-course set dinner on 27 and 28 September 2013.  On the first evening, the set dinner will feature Steamed Lomi Salmon Rice Ball with Hibiscus Ume Ankake, Coconut Butter Poached Lobster with Galangal and Kaffir Lime, Soy-Braised Short Ribs with Gingered Shrimp and KoChoo Jang Sauce and a sweet ending of Cream of Matcha with Mint, Raspberry and Chocolate Wafers.  On 28 September 2013, the set dinner comprises Duo of Tuna – The Pate and Tuna Sandwich, Kona Lobster on Old-Fashioned Creamed Corn, Duck Confit and Portuguese Sausage Bean Ragout with Tamarind Gastrique and Tropical Paradise Baba.

The Hawaiian-themed weekend ends with a relaxing Sunday brunch on 29 September 2013.  The brunch begins with a buffet of flavourful Western and Hawaiian appetisers, including Stuffed Roasted Tomato with Goat Cheese and Ume Gastrique, Roasted Beef Strip Loin with Pho Flavours and The Waterfall’s signature dish, Watermelon and Tomato Salad.

For its late breakfast egg dish, guests have a choice of Hawaiian Frittata, Classic Eggs Benedict, Apricot Salmon Egg Benedict with Spinach and Salmon Roe on a Brioche Bread or Egg en Cocotte with Chorizo.

The à la carte main course selections will not disappoint with a wide array of choices, including Tilapia in Lobster Truffle Nage with Yuba and Eryngi Mushroom, Sweet and Sour Crispy Pork Belly with Pineapple Gastrique and Parmesan Seared Scallops with Truffle-Flavoured Edamame Puree.

The tropical celebration will end on a sweet note with an assortment of tempting desserts platter served at the table, including Island Sweet Corn Parfait, Chocolate and Coconut Tart, Kona Coffee Cheese Cake and Classic Crème Brûlée.

About the performers:

Jeff Peterson
Jeff Peterson grew up on the slopes of Haleakala, where he was introduced to the rich heritage of Hawaiian music by his father, a paniolo (Hawaiian cowboy) on the ranch.  As a performer, he has worked with a wide range of international musicians, such as Eric Clapton.  He has also released five solo guitar recordings featuring his slack key artistry.  In addition to performing, he also teaches and runs the guitar programme at the University of Hawaii.  He achieved his milestone in Hawaiian music at the 47th Annual Grammy Awards in 2005, when his record won the award for “Best Hawaiian Recording.”

Nathan Aweau
Born into a musical family, Nathan Aweau started his professional career accompanying seasoned performers, including the legendary Don Ho.  His award winning albums have garnered him accolades, including “Male Vocalist of the Year” and “Jazz Album of the Year.”  Described as “a jack of all trades, master of a wide domain,” Aweau will definitely entertain with natural flair.

Capella Williams and Pomaikai Klein
Born and raised in Hawaii, both Capella and Pomaikai have always had a passion for music and Hawaiian culture.  They are professional hula dancers and perform with some of Hawaii's top artists in Hawaii and around the world.  Capella performed alongside Jeff Peterson in the "Hawaii Night" tour held at Shangri-La hotels in Beijing, Fuzhou and Shanghai.  Meanwhile, Pomaikai was a runner-up in Miss Hawaii Islands 2010.  She is known as one of the most famous and beautiful hula dancers in Oahu.
