Goose Liver Marinated with Sake

Ingredients (recipe for 4 portions)    

  • 400g goose liver  
  • 80g sake 
  • 30g salt 

Method 

  1. Bring water to boil, add salt and remove from heat. 
  2. Plunge the goose liver into the hot water for 45 minutes. 
  3. Add the sake and simmer for 20 minutes.
