Roasted Duck


  • 1 whole duck
  • 10g cinnamon
  • 2g bay leaves
  • 3g star anise
  • 3g nutmeg
  • 80g yellow bean sauce
  • 70g maltose
  • 100g red vinegar
  • 100g water


  1. Wash the duck.
  2. Put all ingredients into the duck’s belly and seal the duck.
  3. Mix maltose, water and red vinegar thoroughly.
  4. Boil mixture and pour over duck skin.
  5. Air-dry for 3 hours.
  6. Bake the duck for 45 minutes in 180°C oven until golden brown.
