Pan-Fried Lamb Rack with Condiments in Nyonya Chili Bean Sauce

Ingredients

  • 100g shallot
  • 50g garlic
  • 100g red chili
  • 80g ginger
  • 80g plum sauce
  • 60g yellow bean sauce
  • 600g lamb rack

Marinate ingredients 

  • Salt
  • Water
  • Corn starch

Method

  1. Cut lamb chop into pieces.
  2. Mix with marinated ingredients for 4 hours.
  3. Pan fry the lamb chops until golden brown and cooked.
  4. Drain the oil and pour the sauce on lamp chops.

Cooking sauce method 

  1. Sauté shallot, garlic, red chili and ginger with oil until fragrant.
  2. Put in yellow bean sauce and sauté until fragrant.
  3. Add plum sauce.
