Maguro Tartar Avocado Sauce

Ingredients

  • 100g non fat tuna
  • 50g Chinese yam, diced small
  • 30g spring onions, shredded
  • 1 egg, poached
  • Soya sauce
  • Wasabi
  • Carrot garnish

For the avocado sauce

  • Avocado
  • Mayonnaise
  • French dressing

Method

  1. Mince the tuna and marinate with soya sauce and wasabi according to taste.
  2. Shape the marinated tuna into a round, using a mould.
  3. Top the tuna with the yam, spring onions and poached egg.
  4. Garnish with carrot and avocado sauce on the side.

For the avocado sauce

  1. Make up a paste from the ingredients, according to taste.
