Shangri-La Hotel, Singapore has appointed Giuliano Berta as the new chef de cuisine of The Waterfall. Deeply rooted in traditions, Chef Giuliano will enhance the healthy, yet creative Mediterranean philosophy of the restaurant with his passion for classic Italian ingredients.
A native of Brescia, Chef Giuliano honed his culinary skills at the prestigious Caterina de 'Medici Culinary Institute. Upon graduation in 2000, he made his way to Newcastle, United Kingdom and eventually landed in the kitchen of Michelin-starred Chef Marco Torri at Teca in London. After four years in the United Kingdom, Chef Giuliano returned to Italy to work under the mentorship of world-renowned executive chef Adriano Cavagnini, who also boasts a Michelin star. The invaluable experience and his hard work propelled him to the position of chef de cuisine at Hosteria la Palazzina in 2008.
Chef Giuliano’s journey to Southeast Asia began in 2009. He started as the executive chef of a Balinese resort before joining Garibaldi Kuala Lumpur in the same capacity in 2010. Crossing the causeway as The Waterfall’s new chef de cuisine, his responsibilities include formulating The Waterfall’s menu concept every season, sourcing for gourmet merchandising and, most importantly, providing leadership to the restaurant’s culinary operations team. He hopes to introduce a diverse menu of both classic and creative Mediterranean cuisine with a focus on sustainable dining.
