120g green peas
20g snow peas
Extra virgin olive oil
1. Blanch the green peas in boiling water. Keep 20g of the green peas to the side and blend all the rest with oil, salt, sugar and a little bit of water.
2. In a separate pot, bring water to a boil and blanch the snow peas in it. Remove the snow peas from the water and season them with oil and salt.
3. Preheat a frying pan. Season the scallops with salt and pepper and pan sear them on both sides.
4. Arrange the puree, green peas, scallops and snow peas on the plate. Garnish the dish with mint leaves and serve.
