Ingredients (serves one)  

  • 80g green chilli 
  • 5g red chilli 
  • 5g coriander 
  • 60g eggplant 
  • 5g galangal 
  • 5g garlic 
  • 5g shallots 
  • 20g lemongrass 
  • 120g coconut milk 
  • 10g palm sugar 
  • 2g Kaffir lime leaves 
  • 10g coriander seeds 
  • 2g white pepper powder 
  • 2g shrimp paste 
  • 2g basil 
  • 150g chicken breast  


  1. Sauté the curry paste in a wok. Add the coconut milk and heat through. 
  2. Add the chicken, fish sauce, palm sugar and heat through. 
  3. Add the eggplant, sliced red chilli and basil. 
  4. Steam pumpkin for 7 minutes and pour the cooked green curry chicken into it.
