Steamed Cod Fish with Olive and Black Bean Paste


  • 150g cod
  • 30g olive black bean paste
  • 5g oyster sauce
  • 2g chicken powder
  • 1g soy sauce
  • 2g sugar
  • 5g red bell pepper
  • 2g rice flour
  • Garlic
  • Dried mandarin peel
  • Thai chilli


  1. Drain off the water content from the olive and black beans and chop.
  2. Stir fry the garlic, dried mandarin peel, Thai chilli.  Add the chopped olives and black beans and fry together.  Add sugar and mix well until the sauce is thickened.
  3. Slice the skinless cod fish.
  4. Mix the thickened sauce with oyster sauce, soy sauce, and chicken powder and pour over the fish.
  5. Steam for 4 minutes.
  6. Sprinkle with chives and red bell pepper.  Pour hot oil over the fish.


  • Use low heat when stir-frying the olive black bean sauce, otherwise it will taste bitter.
