At the helm of Acqua, Shangri-La’s Mactan Resort & Spa, Cebu’s stylish Italian restaurant, is Italian Chef Gianfranco Pirrone.
Known as Chef Franco, this personable gentleman developed an early appreciation for cooking with fresh, healthy ingredients. A quick study in a household of enthusiastic cooks, this native of Sicily spent years of his childhood in the family kitchen, happily mastering the subtle art of seasoning with his parents and siblings.
Believing that no dish should taste ordinary and that a perfect balance of flavors should be achieved every time, Chef Franco draws inspiration for new dishes from ingredients on hand. Passionate about the importance of savoring each bite, he delights in tailoring dishes to guest preferences and considers himself a “creative perfectionist.”
Since he joined the resort’s culinary team in 2013, Chef Franco has received praises for sumptuous signature specialties, such as the hearty Gamberoni Grigliati Alla Siciliana(Grilled Tiger Prawns in Chili-Garlic Sauce served with Mixed Vegetables and Roasted Potatoes), the piquant Carpaccio di Salmone Marinato Alle Erbe e Limone (Thinly Sliced Salmon Fillet drizzled with Citrus Vinaigrette and Shaved Fennel Salad), the creamy Risotto con Gamberi Profumato Allo Zafferano(Arborio Rice with Saffron, Prawns and Parmesan), the appetizing Di Tutto Un Po’ Salumi e Formaggi (Selection of Italian Antipasti – Cold Cuts and Cheeses served with Rocket Salad), and the succulent Costine D’Agnello e Polenta Grigliata con Caponata di Verdure (Lamb Chops and Grilled Cheese Polenta with Ratatouille of Vegetable and Rosemary Garlic Sauce).
