Executive Chef Roshan Fernando Joins Shangri-La’s Mactan Resort & Spa, Cebu

Cebu, Philippines, November 21, 2018 – Multi-award winningExecutive Chef Roshan Fernando takes over the culinary team at Shangri-La’s Mactan Resort & Spa, Cebu.

Prior to coming to the Philippines, he was the executive chef at Sule Shangri-La, Yangon in Myanmar. He was the team leader of the national team that represented the country for the first time at the most recent IKA Culinary Olympics, a quadrennial chefs’ competition and the biggest culinary exhibition in the world. The team won gold and silver in the regional food categories. For his mentorship of young local chefs and his efforts in bringing global attention to Myanmar’s cuisine, he was recognized as “Chef of the Year” at the Myanmore Awards.

He was on the Shangri-La Hotel, Dubai team that achieved the dual distinction of being the first Hazard Analysis and Critical Control Point (HACCP)-certified hotel in the emirate and the first ISO 2200-certified hotel in the Middle East, and made regular winning appearances at the annual Emirates Salon Culinaire.

Chef Fernando was selected for the silver-medal-winning UAE national team that competed in international culinary competitions in Hong Kong and Singapore, as well as the Dubai World Hospitality Championships. The team also won a gold medal at the IKA Culinary Olympics.

Chef Fernando began his career as an apprentice at one of Colombo’s most prestigious hotels. He then moved to Oman and the United Arab Emirates, gaining valuable experience in well-known pre-opening luxury brands and banquet operations on a lavishly massive scale.

Chef Fernando chooses not to showcase any signature dishes; rather, his professional style is one that revolves around continuous innovation and reinvention. He is especially adept at taking the traditional flavors of his homeland and infusing these with global influences to create new and unique combinations.

Together with his lifelong curiosity and openness to discovery, another one of Chef Fernando’s admirably subtle traits is his palpable sense of calm; his steady manner of overseeing the often-frenetic pace of resort culinary operations and his good-natured willingness to lead by example only enhance the confidence and quality of the robust culinary team he now leads.
