Diners who choose the Observatory will be treated to menus from Executive Sous Chef Patrick Buttgereit. Chef Patrick draws upon a wealth of global experience to create his signature East-West fusion, showcased in such dishes as the Kilawin Tanguige (Filipino-style fresh raw fish in vinegar, pomelo, coriander, chili pepper and chopped onion) and the Seafood Platter, piled high with lobster, prawn, mussel, clam and served with special Cowrie Cove dipping sauces.
