Lemon Seafood Risotto

Lemon Seafood Risotto

Ingredients (recipe for 1 serving)

  •  
  • 80gms Carnaroli or Arborio Rice
  • 50gms of assorted seafood (prawn, squid, mussel)
  • 20gms butter
  • 10gms Parmesan
  • 1/2 cup white wine
  • Extra virgin olive oil
  • Vegetable stock
  • Onion, diced
  • Garlic clove, chopped
  • Lemon peel, grated
  • Pesto sauce
  • Salt
  • Pepper

Method

  1. In a pot, toast rice with oil, onion, garlic and salt.
  2. Slowly add the vegetable stock and stir until rice is cooked.
  3. Remove rice and put in Parmesan, butter and lemon peel.
  4. Season using salt and pepper, mix and set aside.
  5. Separately blanch the seafood in salted water, then season with pesto sauce.  
  6. Set rice on a plate with seafood and serve.
