Wild Chicken Noodle Soup

Ingredients

  • 400g wild young chicken
  • 100g choy sum
  • 30g ginger
  • 30g shitake mushrooms
  • 30g leeks
  • 250g local noodles
  • 10g black fungus
  • 200g chicken stock

Method

  1. Clean the chicken and cut into small pieces.
  2. Wok fry the leek and ginger.
  3. Add chicken and fry for a few minutes, then pour in the chicken stock. Bring to a boil.
  4. Add the noodles and all vegetables into the soup.
  5. Season and serve.
