Yam Mousse with Blueberry Coulis

Ingredients

  • 200g yam
  • 30g cream
  • 10g sugar
  • 50g blueberry sauce

Method

  1. Steam the yam.
  2. Put through a blender with cream and sugar until smooth.
  3. Refrigerate. Add blueberry coulis before serving

Tip

  • For best results, use Henan yam.
  • Make sure yam is cold before serving.
