About Pascal Aussignac
Chef Aussignac may have hailed from Toulouse, France, but he has made his name across the Channel in London, where he has built the reputation of Club Gascon since 1998.  Dedicated to seasonal dishes from France, the flagship restaurant has won many awards, including one Michelin star, and has prompted Chef Aussignac to build a series of partner restaurants across the British capital city.

About Piacere
Piacere is Shangri-La Hotel, Tokyo’s signature restaurant located on Level 28.  Decoratively hanging from a ceiling two floors high, the Venetian glass chandelier compliments the Mediterranean blue interior to create the warm environment for fine Italian cuisine.  From the glass windows, guests can view the Marunouchi business district and the Imperial Palace.  They can look down upon the bustling Tokyo station, which is especially dazzling at night from the dramatic atmosphere of the candle-lit room.  Chef de Cuisine Paolo Pelosi grew up in Prato, in the centre of Tuscany, which has inspired both the ingredients and the flavours of Piacere’s signature dishes.  He focuses on the highest quality ingredients available and presents them with imagination, including the popular “Pici” dish that uses the Tuscan tradition of sticky-texture pasta.
