Shangri-La Hotel, Jakarta introduces Hideki Chomei as the new hotel’s Japanese Chef at Nishimura restaurant. The chef from Kumamoto, Japan joined the Shangri-La Hotel, Jakarta family in 2011.
Chef Chomei has had a passion for food since his childhood, when he helped his fish shop owner father cut and sell fish. At a young age, his father taught him how to use a knife and make sashimi. Since then, his infatuation for cooking has never stopped growing.
Chef Chomei started his career as a cook at one of Japan’s prestigious hotels in 1994. Gaining experience, he has developed his skills and learned various tastes and techniques through the exchange of knowledge with the many Japanese colleagues he met along the way.
The humorous chef, who loves to cook kaiseki, a traditional eight-course Japanese chef’s menu, is now the Japanese chef at Nishimura.
During his leadership, Chef Chomei wishes to introduce the authentic taste of Japan to a wider range of customers in Jakarta. Chef Chomei has worked in various five-star hotels in Japan and Singapore. His favourite food is Japanese Wagyu Beef. During his stay in Indonesia, he developed his love for Indonesian Nasi Campur.
