The Oriental Hosts Guilin Cuisine Week

Guilin is a region blessed with beautiful mountains and abundant rivers, which gives the local cuisine a distinctive quality.  Guilin cuisine takes the best flavours from Hunanese, Cantonese and Sichuanese cuisines to create a unique blend of lightly seasoned dishes with a crisp yet tender texture made with the freshest ingredients.

From 8 to 21 April 2013, The Oriental restaurant at Traders Hotel, Beijing presents diners the finest Guilin cuisine prepared by two chefs visiting from the Shang Palace restaurant at Shangri-La Hotel, Guilin.  The dishes available include Guilin Rice Noodles, River Snail stuffed with Minced Pork, Bean Stick fried with Fungus and Vegetable, Stir-Fried Li River Dry Fish with Pickled Sour Beans, Braised Pork Ribs with Osmanthus, and Live Fish Braised with Liquan Beer, allowing diners to enjoy the most authentic flavours from the mountains and rivers of Guilin. 

A mention of Guilin cuisine always includes Guilin Rice Noodles, which is a dish full of flavours; the noodles are skilfully marinated over a long time in pork bone and beef bone stock, luo-han-guo herbs and various seasonings to create a rich delicacy bursting with tender deliciousness.  Another dish always mentioned is River Snail stuffed with Minced Pork, a dish that is both delicious and good for the digestion, with a smooth texture and fascinating flavours.  The Live Fish braised with Liquan Beer is uniquely crispy yet tender, with its inner and outer layers providing different textures.
