The freshly minted Jing An Shangri-La, West Shanghai has a new draw: the just-opened Mediterranean restaurant, Calypso. SHANG PALACE'S SIGNATURE DISHES
Braised Bean Curd with Minced Pork and Sweet and Spicy
One of the most popular dishes at Shangri-La Hotel, Guilin's Shang Palace, this dish is cooked using local ingredients: tofu (bean curd), homemade sweet and sour sauce mixed with salty fish, chilli sauce, dry scallops and minced beef. It is served in a stone pot and differs from Sichuan Mapo Tofu because it is less spicy, but with a richer and more sweet-and-sour flavour.
Braised Pork with Dan Quan Spirit
The main ingredients of the dish is free-range pork from the Beihai Gulf and Guangxi-produced liquor Dan Quan Spirit. The chef chooses marbled pork with skin. Placing the cooked pork into a bowl, he adds a series of flavour-enhancing sauces, such as dark soy sauce, chicken sauce, oyster sauce, abalone sauce, teriyaki marinade and Maggi soy sauce. Crystal sugar, ginger, garlic bulb and Dan Quan Spirit, Liquan beer and yellow rice wine are also added before it is simmered for three to five hours. The cooked marbled pork will be placed on preserved vegetables and the cooked sauce is poured over the pork. The Chinese executive chef of Shangri-La Hotel, Beihai's Shang Palace won Shangri-La Hotels and Resorts' Chinese Master Chefs Culinary Challenge 2013 with this dish for its localised ingredients and great taste. Now, it has become one of "the must-order dishes" at the hotel's Shang Palace.
Inside Look at Beijing's Best Peking Duck
Duck is generally considered in traditional Chinese medicine as sweet and neutral in energetic quality. It may have either a mild warming or cooling effect on the body, depending on how it is cooked. Roasted duck is considered good for generating Yang (warming) energy in the body and inducing internal heat. In modern nutritional views, duck meat provides a rich amount of Vitamin B complex and E, and contains more protein than red meat and less fat than pork.

The First "Les Clefs d'Or" in the Chinese Garden City
Jack Zhang, chief concierge of Shangri-La Hotel, Suzhou, has newly been accepted as member of "Les Clefs d'Or" in Suzhou. After being a member of "Les Clefs d'Or China" (also known as Golden Key Association China) for three years, Jack successfully passed the qualification session and became an international member in December 2013. He is the first chief concierge in the city and in the Jiangsu Province to receive this honour.
