Dining Out with Three Hats at Award-Winning Altitude Restaurant

Altitude Restaurant has been awarded the prestigious three chef hats in the recently launched Gault&Millau Sydney Restaurant Guide. Praised for the restaurant's signature dishes, including the barramundi, which was described as a 'work of art', and a deconstructed carrot cake that is 'given a new lease on life', Altitude received an impressive score of 15 out of a possible 20 in the guide.

The 2014 Gault&Millau Sydney Restaurant Guide (The Yellow Guide), Sydney's only independent, internationally recognised restaurant guide, was launched in November 2013 with reviews of over 300 of Sydney's best restaurants and cafés.

Established for more than 40 years, Gault&Millau uses the same internationally respected judging criteria worldwide, focusing on the chefs, their food and creativity. Gault&Millau Chief Judge Marc Esquerre travelled from France to Australia to review a number of restaurants himself and said he was particularly impressed with the dedication of the younger chefs in Sydney and the quality of menu they are producing.

Altitude, the iconic Sydney restaurant perched at the top of Shangri-La Hotel, Sydney, welcomed a new chef de cuisine, Matthew McCool, in late 2012. He now leads a team of 11 chefs. Chef McCool and the team's talent is accurately described in the restaurant's review with such phrases as amazing, innovative, beautiful, pure brilliance and a culinary adventure.

The Gault&Millau restaurant guide began in Paris in 1972 as a benchmark to fine dining in France. It is now published in seven countries, including Australia, France, Switzerland, Belgium, Hungary, Austria and Germany. The guide's taste for European dining and techniques perfectly harmonises with the Altitude team's global expertise for flavours and technique. Altitude's chefs represent various corners of the world, with skills in France, Italy, Hong Kong and the United Kingdom added to Chef McCool's 12-year career spanning time at Chez Bruce in London; Phillippe Restaurant in Biarritz, France; and Hotel Arlberg in Lech Zurs, Austria.

Altitude Restaurant opens from Monday to Saturday with an extensive a la carte menu, a four-course weekend menu, a seven-course degustation menu and a 10-course Chef's surprise menu during the week.
