Altitude Restaurant reaches new heights

Altitude Restaurant, the iconic Sydney restaurant perched at the top of Shangri-La Hotel, Sydney, welcomes a new chef de cuisine, Matthew McCool. Chef McCool was previously with the renowned Aria Restaurant at China World Hotel, Beijing.

Chef McCool joins the restaurant with over 12 years of experience at establishments in China and the United Kingdom, including Bank Restaurant, two-star Michelin restaurant Chez Bruce, Tom Aikens Restaurant and a post training alongside Gordon Ramsey at Maze, a three-star Michelin restaurant in London.

Renowned for exquisite cuisine and its signature view, Altitude Restaurant is one of Sydney’s most desirable addresses and recently won the accolade of an Australian Good Food and Travel Guide 2013 Chef’s Hat.

“I’m thrilled to be further developing my ideas and love for food at an iconic Sydney restaurant like Altitude. Fresh and organic produce from local suppliers will be our focus and making seasonal fruit and root vegetables the hero of our dishes,” said Chef McCool, who is excited about his success after only a few months at Altitude.   

Chef McCool’s experience in China has led him to develop a new menu that combines his intriguing techniques with local Australian produce that perfectly harmonises on the plate. The chef’s signature style is surprising food combinations, such as white chocolate and artichoke brûlée – a recent addition to the menu at Altitude Restaurant.

During his time at Aria Restaurant in Beijing, Chef McCool secured a range of prestigious awards, including being named “Chef of the Year 2011” at the TimeOut Beijing awards and “Restaurant of the Year” by City Weekend Beijing.

Chef McCool works alongside award-winning Chef Steven Krasicki, who now runs the hotel’s central food operation in the role of executive chef for Shangri-La Hotel, Sydney.
