The 2018 Shangri-La Express Christmas log by Pastry Chef Michaël Bartocetti – The Shangri-La Express

For the end-of-year celebrations, Michaël Bartocetti, Pastry Chef at Shangri-La Hotel, Paris, immersed himself into his childhood memories and imagined a yule log in tribute to an object that was particularly dear to him: a toy train, called The Shangri-La Express. 

Evoking the magic of Christmas and shared family moments, it reminds him of the wooden train collection his grandfather had given his father, which then became a present to him. Astoundingly realistic, The Shangri-La Express will enchant children and adults with its absolute delicacy.

This “toy-log” offers a delicious mixture of textures and flavours. Chocolate mousse infused with light and airy lemongrass and candied banana with vanilla/lime impart sweetness and unctuousness. A peanut crisp with fleur de sel and a chocolate biscuit base – with no flour – on dark chocolate play the intensity card. Garnished with a peanut praline and covered in white chocolate, the chimney of the little train is the delicate touch par excellence. Its waggon transports chocolate/lime truffles, just as a Christmas treat…

All about Pastry Chef Michaël Bartocetti 

From a very early age Michaël Bartocetti knew he wanted to be a pastry chef. Finalist in the “one of the apprentices in France” competition, the youngster from Lorraine arrived in Paris working with Guy Savoy in 2005 at the age of 21.

The promising young chef met Alain Ducasse, and two years later he awarded him responsibility for pastries in his Parisian café with a Michelin star, Benoît.

Creative, ambitious and a technician with no equal, in 2009 Michaël Bartocetti joined the triple star restaurant at the Plaza Athénée hotel.

In June 2015 he did not hesitate to look up Christophe Moret at the Shangri-La Hotel, Paris. “Monitoring all the sweet offerings at this palace is a formidable challenge. I can express my passion and give rein to my imagination across all my creations, as I work in tandem with Chef Christophe Moret”.
