Maxence Barbot, Pastry Chef

Guy Bertaud, General Manager, and Christophe Moret, Executive Chef are delighted to announce that Maxence Barbot has been appointed as the new Pastry Chef at Shangri-La Hotel, Paris. Maxence Barbot will take up his new role on 5th November 2019.

Originally from Brittany, Maxence developed a taste for cooking, and particularly in the art of pastry, at an early age. Having graduated from catering college in La Guerche, he gained experience at several prestigious Parisian establishments during his career to date. In 2012, he was appointed Commis Chef at Plaza Athénée, working alongside Christophe Michalak and Jean-Marie Hiblot, and was later promoted to Demi-Chef de Partie. Creative and ambitious, he was crowned runner-up in the French Plated Dessert Championships in 2013.

Following this experience, he then joined the team at the George V hotel as Chef de Partie, spending two years at the Le V restaurant before pursuing his passion at Christophe Roussel's Relais Dessert restaurant in La Baule. Maxence Barbot's creativity thrived on this familiar and much-loved home ground; a place for him to explore boutique patisserie and develop his passions to new heights.

His thirst for knowledge led him to join Chef David Bizet in embarking on an enriching venture: opening L'Orangerie at the George V restaurant in 2016 as Junior Pastry Sous-Chef. Armed with this experience, he returned to Plaza Athénée to further pursue his passion and learn from Chef Angelo Musa over the course of three years.

Maxence Barbot will take over from Michaël Bartocetti as Pastry Chef at the Shangri-La Hotel, Paris on 5th November: "Armed with my past experience, creativity and passion, I am now ready to bring all my energy and drive to the beautiful Shangri-La Hotel, Paris, alongside the Executive Chef Christophe Moret. I am keen to show off my personality through my pâtisserie and express my identity through my creations." says Barbot as he looks forward to joining the hotel team and leading the Pastry Kitchen into a new era.
