Ingredients

  • 3 cups chicken broth
  • 1 stalk lemongrass
  • 2 pcs kaffir lime leaves
  • 8 large whole prawns
  • 1 tbsp fish sauce
  • 1-2 red chillies as desired
  • 3 tbsp garlic, minced
  • 3 medium tomatoes, cut into wedges
  • 1-2 cups coconut milk, fresh or canned
  • 1 tsp tamarind paste
  • 2 tbsp brown sugar
  • 3 tbsp lime juice
  • 3 tbsp fresh coriander leaves

Method

  1. Place the chicken broth in a medium-sized pot with the lemongrass and tamarind paste. Simmer for 5 minutes.
  2. Add chilli, garlic, lime leaves and sugar and simmer for another 5 minutes.
  3. Add the prawns and tomato and cook for about 4 minutes until prawns are cooked.
  4. Add the coconut milk and season with the fish sauce and lime juice, adjusting the flavour to taste.
  5. Finish with the fresh coriander and serve.
