Singapore, 17 July 2014 – Shangri-La Hotel, Singapore welcomes Kerene Cheng as the first female chef to lead Shang Palace’s dim sum culinary team. In her new role, Chef Cheng is responsible for conceptualising the 43-year-old Cantonese restaurant’s dim sum and dessert menus. With a team of seven chefs, she is tasked to delight discerning palates with an artful balance of traditional techniques and innovative ideas.
A native Singaporean, Chef Cheng has been perfecting her skills for 15 years at a local five-star hotel and renowned restaurant groups in Singapore prior to joining the Shangri-La family.
Chef Cheng developed an interest in the intricacy of dim sum making when she was 18 years old and is one of Singapore’s few female chefs. She attributes her success in the male-dominated industry to her creativity. Her signature dishes incorporate modern twists to traditional dim sum staples, such as Steamed Gold Sago Ha Kao, Pan-Fried and Boiled Sesame Pork Dumplings, Fried Fresh Prawn Roll with Lychee and Mayonnaise Sauce, Steamed Crab Roe Xiao Long Bao and Chilled Sesame Cream Pudding.
